Classic French Omelette
"This recipe is inspired by Julia Child's Mastering the Art of French Cooking. My grandma Eloise introduced me to Julia when I was a kid. We'd cozy up on the sofa in the early morning and watch her on TV together."

WHAT'CHA DO
1. For an evenly cooked omelet, you need smooth eggs.

2. Use a non-stick pan! Start your pan on medium to medium-low heat. Season the omelet mixture with kosher salt and black pepper right in the skillet
​
3. Start stirring your eggs as soon as you add them to the pan to make sure nothing is sticking to the bottom. scrape down the sides of the pan to make sure no bits of egg overcook. I added cheese but you can go classic.
