I am feeding my body with my Grandma Elouise's Black Pepper Rice! I'm sharing one of my FAVORITE dishes. It is the ultimate comfort food, and it's super easy.

  • 4-6 whole chicken legs

  • 3 cups chicken Stock

  • 1.5 cups rice

  • 2 stalks of celery

  • 4 tbs butter

  • Olive oil

  • Salt

  • Black pepper


1. Season chicken with 2 tbsp olive oil salt and pepper,  place on a cookie sheet with chopped celery and bake chicken at 425 degrees for 35-40 min


2. Remove chicken from the oven and let cool. Once cooled remove the skin and bones. Leave the meat of the chicken on the pan with all those good drippings.


3. Add the chicken and all the drippings, and cooked celery from the sheet pan, add uncooked rice and combine.  Add stock butter salt and lots of Black Pepper give another stir bring to a boil reduce heat and let simmer for 20 min and enjoy!
