Mozzarella Bruschetta

"I remember my mom telling me when she was growing up in Alabama she would pick tomatoes off the vine and eat it like an apple. We won’t do that today but let’s make bruschetta."

  • Tomatoes

  • Garlic

  • Extra virgin olive oil

  • Basil 

  • Sea salt 

  • Black pepper 

  • Balsamic vinegar

  • French baguette


1. Cut the tomatoes and de-seed and squeeze out most of the juice.


2. Add basil, vinegar, red pepper, and remaining 1/2 teaspoon salt to bowl with tomatoes and toss to combine. Add garlic and oil. Toss to combine. Let marinate at least 30 minutes.


3. Slice baguette, add butter to skillet and toast each side. Spoon tomatoes on top of the bread! Enjoy.
